Yield per Hectare of Grapes: 120 quintals/ha, of which 40% selected and suitable for producing Amarone
Vinification: The grapes, handpicked, are immediately crushed and undergo maceration for 10 days, fermentation, and subsequent racking. In November, to the Valpolicella wine obtained in this way, 15% of grapes previously dried in the fruttaio are added for a second maceration and fermentation of about 20-25 days.
Aging: Slavonian oak barrels of 50hl for 12 months.
Refinement: 3 months in the bottle.
Color: Ruby red.
Aroma: Intense, with good complexity, featuring notes of ripe cherry and black pepper. Delicate hints of undergrowth.
Taste: Dry, fairly soft, and with good freshness. It maintains on the palate the pleasant fruity notes perceived on the nose with intensity and persistence.
Alcohol content: 13% vol.
Gastronomic pairing: An ideal wine that pairs well with traditional Veronese dishes, from a simple sandwich with soppressa Veneta to bollito misto with pearà.
