Yield per Hectare of Grapes: 120 quintals/ha, of which 40% selected and suitable for producing Amarone
Vinification: The grapes, handpicked selecting the best bunches, are dried in small crates arranged in a ventilated and humidity-controlled drying room for about 100 days. This is followed by crushing, maceration, and fermentation for a period of 30 days and subsequent aging.
Aging: 4 years in new 225l barriques.
Refinement: 6-8 months in the bottle.
Color: Deep garnet red.
Aroma: Vanilla, with hints of sweet spices, cherry jam, toasting, and notes of ripe plum.
Taste: Warm, velvety, persistent.
Alcohol content: 16% vol.
Gastronomic pairing: Ideal with braised and stewed meats accompanied by polenta, with the famous Amarone risotto, and aged cheeses. Excellent wine for meditation.
