Climate: Continental with good temperature variations for excellent grape ripening
Harvest: Manual, end of September, beginning of October
Yield per Hectare of Grapes: 120 quintals/ha, of which 40% selected and suitable for producing Amarone

Vinification: The grapes, handpicked selecting the best bunches, are dried in small crates arranged in a ventilated and humidity-controlled drying room for about 100 days. This is followed by crushing, maceration, and fermentation for a period of 30 days and subsequent aging.
Aging: 60% in Slavonian oak barrels for 24 months and 40% in Allier oak barrels for 18 months.
Refinement: 6-8 months in the bottle.
Color: Deep garnet red.
Aroma: Vanilla, with hints of sweet spices, cherry jam, toasting, and notes of ripe plum.
Taste: Warm, velvety, persistent.
Alcohol content: 15% vol.

Gastronomic pairing: Ideal with braised and stewed meats accompanied by polenta, with the famous risotto all'Amarone, and aged cheeses. Excellent wine for contemplation.
