Vinification: The grapes, handpicked, are crushed and left to ferment for 10/15 days.
Aging: In stainless steel tanks for 15 days.
Refinement: Several weeks.
Color: Good intensity ruby red.
Aroma: Intense and fruity, reminiscent of the typical fragrance of Marasca cherry from Valpolicella. Slightly herbaceous with notes of black pepper.
Taste: Dry, fairly soft, with the typical freshness and tannins given by the pure Corvina.
Alcohol content: 13% vol.
Gastronomic pairing: A wine to be enjoyed in its youth, pairing well with traditional Veronese dishes such as the famous pasta e fasoi (pasta and beans), cured meats, and carne salà (salted meat). Serving temperature: 14-16°C
